Overview

hello every one! i After several years cooking fine dinning and living in scandinavia for some years my mind was changed.. so, I decided to go back to roots and create "The Real Oaxaca Cooking Experience" Quinta Brava has a team of 3 professional cocineras and 2 professional chef eager to help you to solve your doubts and guide you across your cooking adventure. with this project Quinta Brava tries to recover and pass the knowledge and the heritage from the real ancient Oaxaca cuisine and the magic with it, also, to show you the ancient methods and utensils that our older relatives used to use with our team, you will cook a nice bunch of recipes from all over Oaxaca in a old fashioned wood stove called "Lorena" the name came cause the way how is been constructed (in Spanish "lodo y arena" in English "mud and sand") and you will be the main chef of this culinary experince, you will cook everything with your hands

Itinerary

we will teach you how to cook Oaxacan ancient traditional cuisine in a real "cocina de rancho" using wood for cooking our meals. the class is completely and 100% grupal hands on class, you will be the main chef of this cooking experience so you can have the chance to reproduce whatever you decide to cook here, all over the world. in the same way how people share knowledge with me, I will share all this knowledge with you with a bunch of recipes to follow an reproduce at home

we will cook diferent things coming from nixtamalized corn, we will stuff the fresh hand made tortillas with quesillo, squash blossoms and much more

MAIN

soup and mole

you will choose a soup and mole adventure to cook with your hands under my instructions, several options to choose from. So many choices....

DESSERT

lechesilla, arroz con leche, fried plantain moletes

This was a five star experience! Our group of 6 had the best time learning to make local cuisine. One of the highlights was to make our own corn tortillas with the metate and cook them over the wood fire on the comal. The mole was one of the best we had the whole trip. I highly recommend this experience.

A WONDERFUL day

This was the best activity we have done, I think anywhere. Our group was so nice and friendly (always helpful!) and Chef Mike was literally the nicest and most knowledgeable guy. The outdoor kitchen was really cool to cook in. The food was outstanding and we all collaborated on what we would make that day before we took off for the market. Many people in the group had little or no experience making home cooked Mexican food and everyone seemed to have a wonderful time. I would very much recommend this to anyone. Oh and the beers and mezcal were lovely, as well

This was probably my favorite tour I have ever done. We had a great time going to a local market and cooking Mexican cuisine. The chef was very fun. We got to cook traditional food in traditional ways.

Loved this full day class. We ate amazing food that we could be creative with and tailor to our own preference. It was fun, interesting and had a great pace throughout the day. It felt relaxed and not overwhelming. Highly recommend it.
