Overview

Kitchen has always been the fulcrum of this home, where my family is living since more than 7 generations. I have always been fascinated by my grandmother's ability to prepare awesome dishes from Tuscan tradition, always with few, simple but precious ingredients. That cultural heritage was in danger of disappearing: I spent a lot of time cooking with her, trying to learn her recipes and secrets. In the end, I realized that she had given me a bigger gift: I had assimilated her cooking philosophy! Then, I realized that tradition is not a dusty book but a living thing able also to adapt to new conditions, and even improve. I studied ingredient's seasonality, their sustainable production systems, new cooking techniques, techniques of tasting: almost without realizing it, in the meantime, I became Chef and finally, also Sommelier. Since a lot of years, I decided to share this path: a long path that is not yet finished... Giacomo

Itinerary

Have fun while learning how to cook in an engaging, familiar, and friendly atmosphere. An unique and complete experience that include 7 different preparations! Taste High Quality wines, expertly paired and explained: Giacomo, Chef & Sommelier, sharing his passions will accompany you on a complete Food and Wine journey! The course is dynamic and include different experiences: Pratical Cooking, Cooking Show, Food Tasting, Wine Tasting and also the friendly and funny Social Experience with the other classmates! Giacomo, will introduce the program talking about his Organic Farm and Sustainable Production Systems adopted, pointing up about the genuineness of the ingredients: the bases of his Food Philosophy. One of your goals will be acquiring the ability to choose the best ingredients to prepare your dishes at home. At the end of the preparations, you'll taste: Appetizer Pappardelle and its sauce Gnocchi and its sauce Main course (meat and vegetables) A glass of selected local Wine to taste paired to each dish, to transform "a lunch" in a real, exciting "Sensorial Path"! Finally you will taste the Tiramisù, sitting relaxed on the terrace whilst enjoying the amazing view.

During all the preparations you have to stay stand: are needed comfortable clothes and shoes.
For hygienic reasons, NO RINGS, LARGE BRACELETS and/or ARTIFICIAL NAILS during the preparations.
For the morning of the class, we recommend to do a good breakfast.
We need to be informed about any eventual intollerance and/or food allergies, BEFORE to complete the booking, to evalue the possibility to change some dish. After booking, requests for changes to the menu cannot be taken into consideration.

One of Tuscany’s highlights

A masterclass in pasta making and knowing which ingredients to use. Made it easy to know I can replicate the amazing meal when I get back to the states. It was truly a highlight of our stay in Italy (including all the sights in the major cities) Giacamo is passionate about what he does and a true chef in every sense of the word

This was truly a fantastic experience. Giacomo is passionate about the food he prepares and we learned so many great new skills to improve our Italian cooking at home. By far this was the most informative cooking class we have had in our 4 trips to Italy. It's all about those small details! Would love to return with friends and family.

An amazing learning and culinary experience

Giacomo is a true chef/sommelier whose passion for local ingredients and traditional methods comes through as he teaches you how to make dishes that are simple but complex at the same time. We were there for more than five hours for the five course meal and it was worth every penny. We came away with a real appreciation for the food, his craft and the ability to cook some of this at home with our local ingredients.

What a fun and educational experience, learning about farm to table cooking from Giacomo and his wife. He shared his grandmother’s recipes and tips for cooking delicious pasta, sauces and tiramisu. This was a hands on experience and ended with dining on our fresh made pasta, paired with Giacomo’s wine selections.

The cooking class with Giacomo was amazing. I have done at least 3 other cooking classes in Italy, but never have I felt the passion and understanding of true local ingredients making the dishes. Giacomo took the time to explain why he cooks a certain way with only particular ingredients. We spent 5 hours with him and his wife Cristiana preparing and then enjoying our 5 courses. What a beautiful home filled with warm and caring people. A must sign up if you want the true Italian experience.
