Overview

You will appreciate the real Parmigiano cheese production in a very traditional factory. It will be possible to see the when cheese makers pull the cheese from the milk vats. You will then be taken to the seasoning/storage rooms to see the final stages of production. At the end of the tour there will be a tasting of different aged Parmigiano Reggiano Cheeses. For Parma ham Prosciutto factory visit we will proceed to the idyllic hills of Langhirano home of Prosciutto di Parma Ham. You will move into the “environmental temperature stage”, by visiting the seasoning rooms, here characterized by the typical scents of the ham. During this stage it will be explained the method of “spillatura”, the process in which only the finest ham pasts the test, those selected by the Inspector of the Consortium will then be branded with the infamous ‘Crown of Parma’. At the end of the food tour there will be a degustation of Parma ham and a glass of Malvasia, a sparkling, white local wine.

Parmigiano Reggiano Cheese factory The tour commences with a brief history of Parmigiano Reggiano Cheese. You will then proceed inside the factory where you will be able to see the production of the cheese taking place however, if you wish to see the start of the process the tour must commence before 9.00am as this is the time the cheese makers pull the cheese from the milk vats. You will then be taken to the seasoning/storage rooms to see the final stages of production. At the end of the tour there will be a degustationof different aged Parmigiano Reggiano Cheeses. There is also the opportunity to buy local products from the on-sight shop.

We had a great time with Loris on this tour! We ended up with only 8 people and our guide was right on time to pick us up. I was very excited to see the process of making both parmigiano and pruscuitto and this tour lived up to the hype! Claudio the owner of the pruscuitto factory was very kind and even let us try his homemade balsamic. One of my favorite experiences while in Italy!

We loved this tour! We had our 19yo and 16yo with us and they loved it too. George was a great tour guide and was very informative and knowledgeable. Everyone at the dairy and the proscuitto place was lovely and the highlight was 71yo Claudio, the owner of the proscuitto place, carving up his prosciutto for us to taste. Absolutely delicious! I would highly recommend this tour!

Great tour of family operated parmigiano and Parma production. Highlight was being there for the extraction and molding process of the parmigiana cheese.
