It was a great day! Claudio, our guide, was interesting, friendly, accommodating, knowledgeable and funny.
It rained most of the day, but with the exception of getting in and out of the car and walking into a building, it was all indoors. Perfect activity for a rainy day.
We visited where they make their parmigiano reggiano and learned about the process to make the cheese. It was very interesting and smelled oh so good! Then we enjoyed a selection of three cheeses, 12, 24 and 36 months. They also offered several varieties of Parma ham that many enjoyed. Plus a glass of the local red, dry, sparkling wine called Lambrusco. It was fantastic!
Next we visited the dairy farm, it didnāt smell any where near as good as the cheese. lol This was the shortest stop and our least favorite for a few reasons.
Last stop, their private batteria of balsamic barrels dating back 400 years. Again, we learned a lot and afterwards were able to taste three different ages of their balsamic: 8, 12 and 25. All the same product, just different ages and all good, but thereās a reason they call the 25 year old āgoldā - it was amazing!!! After the sampling, Claudio served up some vanilla gelato and drizzled some of the āgoldā over it. Perfection!
