Overview

We will begin by preparing some delicious salsas, followed by an authentic and traditional Mexican mole, tasty enmoladas, and mexican rice. You'll be educated on the ingredients, tell you about the culinary and nutritional values, and how to prepare and cook each part of the meal. We are always vegetarian, vegan or gluten-free friendly if that is an interest. We will discuss the history and cultural importance of the Mole and how it used to be the “Food of the Emperors”, reserved only for the upper class of the Mayan and Aztec society. During the lesson you will be enticed to explore your environment: the cozy den with its fireplace and library; and the surrounding courtyard with its organic gardens and gorgeous landscapes. Having prepared the delicious meal, we will sit down and dine, engaging in wonderful conversation. As welcome we will enjoy a pure cacao chocolate drink and plenty of delicious Mexican wine at all time. All while surrounded by a beautiful and tranquil environment.

We will meet at Aldama 9 in Centro right where the class will take place. Its only one block and a half from the Parroquia. Simply walk down Cuna de Allende to Cuadrante. Take a left and then an immediate right onto Aldama. Walk half a block to Aldama 9 and ring the doorbell to enter.

Itinerary

An antique Mansion right in the heart of San Miguel de Allende is the perfect setting for this beautiful cooking class. You will learn with a mexican chef how to prepare the salsas and the mole dish and we'll talk all about each ingredient that we use to create these authentic and gourmet gems. We are always vegetarian, vegan or gluten-free friendly. For an exceptional and fun experience, the class includes authentic Mexican chocolate water and delicious red wine made in Mexico throughout the class and dinner.

Chef Miguel is wonderful! Made this the best experience we did in SMA. He's prepared, knowledgeable, warm and fun--and the venue worked perfectly. A terrific way to learn more about the culture, enjoy some new tastes of the cuisine and take home some new tips.

This experience was one of the best moments of our trip. Our cooking instructor, Miguel, made the experience better than we could have imagined. He was friendly, knowledgeable, and created a relaxing environment to cook. Highly recommend.

What a wonderful finale to our time in San Miguel. An absolutely lovely setting, the food was fantastic, Miguel was a terrific teacher and chef. I have taken a lot of cooking classes and I think this might be the best one ever. Thanks Chef Miguel!

We had a great time learning to make 2 salsa, one rice dish and amazing mole sauce! Chef Miguel was very knowledgeable as well as entertaining. We booked this fun experience for our wedding anniversary and it turned out...another couple were celebrating their anniversary also! So, we had champagne and red wine! Great time had by all and a wonderful meal that we just created! Thank you Chef Miguel!

Chef Miguel was fantastic! He really enjoys teaching the joys of cooking authentic Mexican food. The setting is beautiful (one minute you're on a busy cobble stoned street, and the next - once behind the walls - you're in this tranquil courtyard and home), and Miguel's passion for cooking (using his Abuela's recipes, of course) comes through from the moment he introduces himself. I could not recommend this experience more highly!
