Overview

An opportunity to take a break from the blue of our beautiful island and go green – enjoy the peaceful Greek countryside and off the tourist beaten beaches. Interact with fellow visitors while we will teach you, step by step, how to make traditional mouth-watering Phyllo Pies. By the end of this class you will have acquired the know-how of these authentic Greek delicacies that you’ve seen at local bakeries and always dreamed of making yourself and take the skills and recipes back home with you.

Itinerary

Discover the secrets of traditional Greek cuisine. Prepare iconic Greek Phyllo Pies with our help and guidance and learn how to make these delicious pastries from scratch! Experience the unique opportunity of baking in our open air kitchen and wood burning oven. We will teach you everything, step by step, and, finally, we will enjoy what we prepared together. Our cooking class begins with a welcoming morning coffee and tea. We start the fire in the wood burning oven and begin to knead our Phyllo dough. We then walk around Lefkada Micro Farm and learn how our food grows. Get to know our trees, our vegetables and our animals. By the time we get back to the kitchen the oven is already hot and the dough is ready to be stretched, filled and rolled. We then prepare four different filling recipes: cheese pie with Feta cheese, wild greens pie with goat cheese, squash pumpkin pie with walnuts and raisins, Graviera cheese pie with honey and cinnamon. Finally, we sit together in our open air kitchen and enjoy what we’ve prepared.

A true spirit

Andreas is a warm and kind soul with so much knowledge and experience when it comes to small scale responsible polyculture farming. He is humble, describing his continuing journey of learning without end - meaning there is always so much more to learn. Nature is honing his already considerable knowledge through endless cycles of trial and error, using traditional knowledge, modern science and his own senses as guides in which to measure success. Andreas seems to have little to no interest in expanding, choosing rather to devote all his energy in the pursuit of personal tranquillity, sustainability whilst striving to achieve the highest quality. He wants his produce to cater primarily for his own consumption and his methods and farm to act as inspiration for improved sustainable small scale polyculture farming. Real food, home and the company of friends and family . And the fact that he loves to inspire others to do the same is a blessing for us guest cause he really hasn’t got the time. Farming is 24/7 job.

Fabulous experience with Andreas and Irene

An absolutely amazing time spent with Andreas and his mom on his Microfarm. The most passionate human being ever! He walked us through the vegetable/herb/flower gardens describing every single thing, why flowers were positioned between certain herbs, how to use certain herbs for medicinal purposes and the citrus/fruit trees as well. Then we got to making the phyllo dough from scratch, kneading/punching it, letting it sit and then rolling it. Irene, Andreas’ very patient mom kept a watchful eye and helped us where/when needed. 2 savory, 2 sweet phyllo doughs were filled with the most amazing combo of flavors. The day we were there we had wild greens for one of the pies: all of the tops/greens of a ton of different veggies and herbs - OMG so good! Feta, sheep’s yogurt, their own honey, it was all amazing! We then rolled the 4 doughs into amazing spirals and baked them in their outdoor wood-fired oven. The smells emanating from the oven were salivating! It was difficult not to devour every single one of these amazing pies. We even got to taste his amazing olive oil - smooth with a fabulous peppery finish. Can’t wait to order this year’s batch in November! Efharisto Andreas - a perfect ending to our week on Lefkada!

My 16 year old daughter and I signed up for the “phyllo pie” making experience, and we had a really lovely time. Andreas is a visionary, who single handedly has developed his organic farm and business over the past three years, and opened it up to visitors. He is a warm, friendly guy, with a passion to explain the benefits of virgin olive oil and living off the land. We loved looking round his farm, but even better was the chance to make phyllo pies under the expert supervision of his sweet mother. Andreas graciously catered for my daughter who can’t have eggs or dairy and allowed her to make her own little pie. We both loved meeting other people from all round the world, and it was great to share the food together once it has cooked with a glass of delicious local wine. This is a very authentic, rustic, hands on experience. If you are expecting a cooking class in a pristine, stainless steel kitchen, from a top class chef, this is not the experience for you, but if you are after an authentic, down to earth Greek cooking experience, we definitely recommend it.
