Overview

The Mardi Gras School of Cooking does small, intimate hands-on classes in the French Quarter. Classes are more like a dinner party with friends. Feel welcomed into our kitchens by the Chefs themselves. From the moment you arrive until you roll out the door our Chefs are friendly, personable and entertaining. Not to mention their culinary skills are impeccable. Our minimum class size is 2 people. A solo traveler may join an already scheduled class. Call us to hear about the available classes. For parties of 8 or more, you will have to contact us directly to book. We have questions.

Itinerary

Youā€™ll begin the class by learning the best kept secrets for authentic New Orleans cooking. We begin by discovering the importance of the Cajun Holy Trinity, and start cutting and prepping to make the best New Orleans cuisine youā€™ve ever tasted. Once the Cajun Holy Trinity is all chopped, we will take a break and get our first glass of wine. Mise en place (everything in its place), we start the Dark Roux for the gumbo. After the gumbo, we start the light Roux for the Shrimp Etouffee. After properly plating your meal, it's time to dine. The last part of the class, (and possibly your favorite) will include teaching you how to make Bananas Foster. Yum! Weā€™ll show you a fool-proof way to make this dessert that is sure to impress your friends and family.

Our team had an incredible time taking the "Roux Class" during our offsiteā€”it was the perfect blend of fun, learning, and collaboration. Even the most experienced cooks on our team picked up new tips and techniques, which added to the excitement. The hands-on experience brought everyone together and made for plenty of laughs and memorable moments. It was undoubtedly the highlight of our team-building activities, and our entire week in New Orleans. Chef Erika, Tracy, and Marcella were a joy to work with.

Great to experience - learned a lot and Randy was a great educator- tough times around New Years 2024 NOLA and everyone made the best of a tragic situation outside the teaching kitchen. Would not hesitate to recommend the class!
