We had the pleasure of participating in a truly special cooking class with Michele, and it exceeded all our expectations. The communication beforehand was smooth and efficient, with quick responses. Michele also took the time to ask about any allergies or intolerances in advance. We were given the opportunity to choose a main dish from a variety of options, and we decided on tagliatelle Bolognese—a dish we’ve made many times at home but were eager to learn the authentic way to prepare it.
From the moment we arrived, Michele warmly welcomed us into his home. We instantly connected, and the atmosphere was relaxed and comfortable. After a welcome drink, we got straight into cooking. It was so much fun, and we learned so many new things—like how to reduce the acidity of sauces (surprisingly, not with sugar!) and how to soften the texture of a Bolognese. We even picked up a lot of new tricks for making fresh pasta dough and our favourite tagliatelle.
Michele was patient and took his time with us, ensuring the experience was laid-back and enjoyable. Once the cooking was done, we were served a delicious appetizer, followed by our masterpiece—the tagliatelle Bolognese. It was simply divine! The meal was perfectly rounded off with a delightful panna cotta for dessert.
Throughout the day, Michele recorded little video snippets, which he later turned into a beautiful video for us to cherish as a memory of this fantastic experience.
A huge thank you to Michele for making this such a memorable day. We can’t wait to recreate these dishes at home and will definitely book another class the next time we’re in Bergamo!
